Though gaining popularity in Western cultures, seaweeds are still relatively unfamiliar to many herbalists, foragers, cooks, ecologically minded folks, and others drawn to the richness and mystery of marine ecosystems. Unlike land plants, seaweeds offer an entirely different palette of flavors, textures, minerals, and bioactive compounds—many of which are increasingly studied for their culinary, nutritional, and medicinal potential.
