Although seaweeds are gaining popularity in Western food and wellness culture, they remain relatively unfamiliar to many herbalists, foragers, cooks, and people interested in natural foods and health. For many people, the seaweed repertoire extends only to broad generalizations such as “kelp” and a few familiar seaweeds, such as nori. Yet seaweeds offer a much wider palette of flavors, textures, nutritional profiles, and distinctive bioactive compounds, along with many potential roles in our kitchens, apothecaries, and health practices.
The breadth of the seaweed repertoire can make knowing where to begin less intuitive. In this introductory class, participants will explore ten practical and approachable ways to bring seaweeds into everyday life. Familiar and lesser-known species will serve as examples, offering a starting point for recognizing the wider range of seaweeds available commercially, including species explored more fully in Foundations of Marine Herbalism.
Designed to stand on its own, Living with Seaweeds offers an accessible starting point and a taste of some of the themes developed in much greater depth in the full immersion. For those already joining us for Foundations of Marine Herbalism, it offers a complementary “ten ways” framework centered on grounded, kitchen-based ways of integrating seaweeds into everyday life, along with several additional recipes not featured in the immersion classes.

Foundational approaches to working with seaweeds as food and medicine.
Recipes and ideas for experimenting in the home kitchen.

Marine Herbalism is more than simply learning about seaweeds—at its core, it's about building relationships. Seaweeds' chemistry, nutrition, and medicinal qualities are inseparable from the dynamic coastal environments in which they live. In turn, working with these living foods invites us to build a deeper relationship with our own bodies and their unique needs.
In this three-part immersion, we'll build a strong foundation for working with seaweeds as foods, medicines, and valuable additions to the herbal repertoire. Moving from foundational concepts to exploring the unique qualities of individual seaweeds, and finally bringing them into the herbal kitchen through creative and practical applications, each class builds upon the last to create a cohesive learning journey.

individual Atlantic and Pacific species
culinary traditions and modern herbal applications

Build a framework for understanding seaweeds as unique and dynamic foods and medicines through an exploration of their diversity, ecology, key nutrients, phytochemicals, therapeutic applications, and practical guidelines for home and clinical use.
🌊 Seaweed Meet & Greet (Feb 9)
Become familiar with common Atlantic and Pacific seaweeds, their unique flavors, nutrient profiles, and therapeutic uses.
🍵 Seaweeds in the Herbal Kitchen (Feb 23)
Bring everything together through an exploration of creative and practical food and herbal preparations using seaweeds. Learn how to integrate seaweeds into your daily life through broths, teas, and tonics. The class culminates in the collaborative formulation of a land-and-sea herbal blend that will be mailed to participants following the series.
