Although seaweeds are gaining popularity in Western food and wellness culture, they remain relatively unfamiliar to many herbalists, foragers, cooks, and people interested in natural foods and health. For many people, the seaweed repertoire extends only to broad generalizations such as “kelp” and a few familiar seaweeds, such as nori. Yet seaweeds offer a much wider palette of flavors, textures, nutritional profiles, and distinctive bioactive compounds, along with many potential roles in our kitchens, apothecaries, and health practices.

The breadth of the seaweed repertoire can make knowing where to begin less intuitive. In this introductory class, participants will explore ten practical and approachable ways to bring seaweeds into everyday life. Familiar and lesser-known species will serve as examples, offering a starting point for recognizing the wider range of seaweeds available commercially, including species explored more fully in Foundations of Marine Herbalism.

Designed to stand on its own, Living with Seaweeds offers an accessible starting point and a taste of some of the themes developed in much greater depth in the full immersion. For those already joining us for Foundations of Marine Herbalism, it offers a complementary “ten ways” framework centered on grounded, kitchen-based ways of integrating seaweeds into everyday life, along with several additional recipes not featured in the immersion classes.

  • Everyday culinary and wellness uses of seaweeds.

  • Examples of useful culinary and medicinal seaweeds.

  • Foundational approaches to working with seaweeds as food and medicine.

  • Recipes and ideas for experimenting in the home kitchen.

  • Topical and home-apothecary applications.

  • Inspiration for developing a more informed and engaged relationship with marine ecosystems.

Participants will leave with an expanded sense of the seaweed repertoire, new ideas for working with seaweeds in their kitchens, homes, or apothecaries, and a clearer understanding of where to begin—or how to continue deepening—their relationship with seaweeds.
